Fractional operations & sales, powered by AI.

Pratt Advisory gives growing food & beverage businesses a senior operator without the full-time hire: fractional ops and sales leadership, custom AI automations, and hands-on AI training and setup. The automations run daily inside real businesses, including mid-sized restaurant groups, food makers, and multi-venue retail chains.

About

Founder-operator with shipped production work.

Tory Pratt is the founder of Pratt Advisory, a DC-based consultancy providing fractional operations and sales leadership, custom AI automations, and AI training and setup for food & beverage businesses.

She previously spent over a decade building Pratt Standard Cocktail Company, a craft cocktail manufacturer she scaled from her home kitchen to 1M oz/month in production, 450+ retail accounts across 35+ states (including 53 Whole Foods), wholesale accounts including Nationals Park, Capital One Arena, and Merriweather Post Pavilion, and a client roster spanning Coca-Cola, Deloitte, McKinsey, the Kennedy Center, and the White House, training more than 1,000 professional bartenders along the way.

Since founding Pratt Advisory, she has shipped production AI automations and growth strategy for DC-area restaurants, food manufacturers, and maker platforms: systems that draft real emails, reconcile real payouts, build custom CRM flows end-to-end, and find real money, every day.

She holds a BSFS from Georgetown's School of Foreign Service and lives in Washington, DC.

A landmark DC restaurant institution

Group bookings, drafted before breakfast.

A landmark DC restaurant institution handles a constant stream of tour-group bookings: 40–70 new group conversations a month, each a volley of quotes, confirmations, headcounts, and payment forms managed by hand from a shared inbox. Pratt Advisory built an AI agent that watches that inbox around the clock, reads every inquiry (attachments included), prices it against the operator’s own validated rate rules, and leaves a reply drafted in the owner’s voice, with the owner always the last step before send.

  • Every inquiry answered with a priced draft: rate rules for 30+ tour operators applied automatically
  • 40–70 new group conversations a month handled; 10,000+ historical threads analyzed to design the system
  • Automatic two-weeks-out confirmations, post-visit receipts, nightly calendar sync, and a 6am daily digest
  • Season price-increase campaign: personalized drafts to 120+ repeat bookers in one day
  • A human approves every customer-facing email. The agent never sends on its own

A family-owned, multi-location fast-casual restaurant group

More than $230,000 of commission leakage, found in the client’s own data.

A family-owned fast-casual restaurant group with locations across the region booked all of its catering through a third-party marketplace, and had never seen what that convenience actually cost. In a short discovery sprint, Pratt Advisory pulled six years of order-level data (nearly 4,000 completed orders), quantified the commission drain, re-ranked the customer base by dollars instead of order counts, and delivered a platform-by-platform migration plan the owner could act on immediately.

  • More than $230K in marketplace commissions identified, roughly 14% of $1.6M in catering sales
  • Roughly $85K/year of ongoing commission cost mapped, with a channel-by-channel plan to cut it about in half on repeat orders
  • Repeat buyers revealed as the business: about a third of corporate customers drive nearly 80% of revenue
  • A single under-served delivery corridor worth over $100K/yr quantified, unlocking a new-location go decision
