A family-owned fast-casual restaurant group with locations across the region booked all of its catering through a third-party marketplace, and had never seen what that convenience actually cost. In a short discovery sprint, Pratt Advisory pulled six years of order-level data (nearly 4,000 completed orders), quantified the commission drain, re-ranked the customer base by dollars instead of order counts, and delivered a platform-by-platform migration plan the owner could act on immediately.
